Ikejime is a traditional Japanese method which maintains the quality of the fish during the kill. Perfect for sushi & dry ageing.

Happy in the fridge for 2 days and suitable for freezing (ideally freeze on day of delivery)                      

You have the option to buy our ikejime sliced or as a whole fillet.
